Peanut Butter Pancakes
These Peanut Butter Pancakes are soft, fluffy and full of rich, nutty flavour. The peanut butter adds a creamy depth to the batter, making them a satisfying choice for breakfast or brunch. Serve warm with sliced banana, a drizzle of honey or a little extra peanut butter for a simple dish that makes the most of familiar ingredients, prepared with care.
Prep Time: 20 minutes

Method
- 1 Sift together the flour, baking powder and sugar. In a separate bowl, whisk the egg, milk and peanut butter (add a little salt if the peanut butter is unsalted).

- 3 Put a non-stick frying pan on a medium heat. Add a tablespoon of batter and cook until golden on the bottom, then flip and cook on the other side (you may be able to cook two or three at a time).
- 4 Keep the cooked pancakes warm.
- 5 Serve with fruit, yoghurt, honey, syrup or any other of your favourite toppings. Maybe even an extra dollop of Proper Nutty peanut butter!
